Valentines Carrot Cake
Ingredients:
- Raw carrots, grated- 3 cups
- Sugar-2 cups
- Cinnamon- 2 teaspoons
- Soda- 1 1/2 teaspoon
- Salt- 1 1/2 teaspoon
- Baking Powder- 1 teaspoon
- Crushed pineapple- 1 (8 3/4 oz.) can
- Beaten eggs- 4
- Salad oil- 1 1/2 cup
- Cake flour- 3 cups
- Vanilla flavoring- 2 tablespoons
- Chopped nuts- 1 1/2 cup
- Frozen orange juice- 2 tablespoons
Cream Cheese Icing:
- Confectioners sugar- 4 cups
- Cream cheese-1 (8 oz)
- Butter- 1/4 cup
- Orange juice or milk- 1 tablespoon
- Vanilla- 2 tablespoons
- Walnuts- 1/4 cup
- Currants- 1/4 cup (plump by soaking in 1/4 cup hot water for 5
minutes and drain)
Method:
- First of all mix together the dry ingredients and drain pineapple
and saving syrup.
- Add syrup to dry ingredients. Put in eggs, oil, vanilla and
orange juice. Beat for about 3 minutes.
- Stir together pineapple, carrots and nuts.
- Bake for about 1 - 1 1/2 hours or till the toothpick remains dry
after inserting in center of cake. Cool it for 10 minutes before
unmolding.
Cream Cheese Icing:
- Pound together sugar, cream cheese, butter, vanilla and milk or
orange juice until it becomes smooth. Fold in walnuts and currants.
